Mole Dulce Recipe:

Chicken:

5 lbs skinless chicken legs
1/2 onion
4 garlic cloves
2 bayleaves
1 tbsp @chefmerito chicken seasoning
8 cups water

Mole Dulce:
1 (8.25 oz) can of mole doña Maria
1 tbsp Jiff creamy peanut butter
8 doña maria cookies
4 cups (reserved chicken broth)

2 abuelita chocolate tablets
Sugar to taste (OPTIONAL FOR MORE SWEET)
3 cups (reserved chicken broth)

Instructions:

To a 8 quart dutch oven add chicken, onion, bayleaves, garlic, chef merito chicken seasoning and water. Cover on high heat and when it reaches a boil cook on medium heat for an additional 15 minutes. Reserve 4 cups to blend with mole ingredients and an additional 3 cups to thin out your mole sauce at the end.
(Set your chicken aside).

To a blender add mole doña maria, peanut butter, cookies, 4 cups of chicken broth and blend. Add to your dutch oven + another 3 cups of chicken broth. Once it reaches a boil add chocolate abuelita and if you want your mole sweeter, add sugar until you reach your desired sweetness. When your mole has slightly thickened, add back your chicken and let it simmer on low for 15 minutes (constantly stirring so it doesn't stick to the bottom of your pan).

Ingredients:

3 tbsps avocado oil
2 garlic cloves
2 cups extra long white rice

1 (7.4 oz) carton of Del Fuerte Tomato Sauce
4 cups of water
Knorr chicken bouillon to taste
1 jalapeño pepper

Instructions:

Add your avocado oil and fry your garlic cloves until aromatic, then add your rice and fry until golden brown. Now add your tomato sauce and fry for 1 minute then add add, chicken bouillon, jalapeño and once everything reaches a boil cover on low for 20 minutes. Once the 20 minutes are up, turn off the heat and let the roce cook with it's own steam covered for another 20-30 minutes. When the time is up, open ip your pan and fluff your rice with a fork, Y LISTO!❤️
