Veggie Bites Recipe
From Feeding Littles & Beyond Cookbook

Ingredients:
•1/3 cup almond flour (or sub whole wheat or oat flour)
•1 cup shredded or grated veggies (I used sweet potato, zucchini and carrot)
•1/3 cup grated Parmesan cheese
•1 large egg
•1/4 tsp. garlic powder
•1 tsp. dried oregano
•Salt and pepper to taste

Instructions:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Mix together ingredients in a medium bowl. Mold the mixture into ball-shaped pieces and place on parchment, making 6 or 7 bites. Bake for 15 minutes, then turn oven up to 400 degrees and bake for another 5 minutes. Let cool slightly before serving.

Prep ahead:
Can be prepped ahead and stored in the freezer for up to 3 months.
