Happy Tuesday! Do you eat at restaurants more than at home (including your coffee stops????)? Have you ever added up what you spend monthly?

At one time, many, many years ago, we looked at our budget and did this exact thing, and in one month, we had spent around $700 on restaurants and coffee dates! Wowzers!

We made significant changes instantly!

To manage the costs associated with feeding a large family clean and organic, we shop at discount stores, buy items in bulk, and take advantage of sales and coupons. We also hardly ever go out (I still have coffee dates once a week, that’s my work day.)

Breakfast: Buttermilk (from @kalona) chocolate chip waffles with @kalona whipped cream, pasture bacon, @kalona Butter, strawberries, and bananas

Second Breakfast: Carrot sticks and hummus

Lunch: Grilled veggie and cheese sandwiches with @siete chips and cucumbers

Optional sourdough toast with nut butter fruit and green Smoothies

Eleventh or Tea/Snack Beef Sticks @chomps

Dinner: Cheezy Beef and Veggie Mac Attack

Buttermilk chocolate chip waffles 4 cups all-purpose flour (organic I also have a recipe that includes almond flour)
9 tsp baking powder
2 tsp Five Spice
2-3 cups @kalonasupernatural_milk_dairy
6 bananas
6 eggs
6 tbsp coconut oil
3 tsp vanilla
2 cups chocolate chips

Ingredients for Cheezy Beef and Veggie Mac Attack

Makes 2 - 9x13 Pans

3 lb elbow macaroni (Chickpea or a gluten-free noodle will also work)
3 lb ground beef (grass-fed)
1 onion, chopped
6 cloves garlic, minced
6 bell peppers, chopped
3 cups frozen peas
3 cans diced tomatoes
6 tbsp Italian seasoning
Salt and pepper, to taste
6 cups shredded grass-fed cheddar cheese @kerrygoldusa
3 cups milk (we used walnut milk, raw milk would be excellent)
1 cup butter (@kalonasupernatural_milk_dairy
1 cup all-purpose flour (optional)

Preheat oven to 375°F

STEP 1: Cook the elbow macaroni according to package instructions. Drain and set aside.

STEP 2: In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.

STEP 3: Add onion, garlic, red and green bell peppers, and peas to the skillet. Cook for 5-7 minutes, until vegetables are tender.

STEP 4: Stir in the diced tomatoes, oregano, basil, salt, and pepper. Cook for an additional 5 minutes.

STEP 5: In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually add milk, stirring constantly, until the mixture is thick and bubbly.

STEP 6: Add the shredded cheddar cheese to the saucepan and stir until melted and smooth.

STEP 7: Combine the cooked macaroni with the beef and vegetable mixture. Pour the cheese sauce over the macaroni and stir until well combined.

STEP 8: Transfer the macaroni mixture to a greased 9x13 inch baking dish (2 of them)

STEP 9: Bake for 20-25 minutes until bubbly and golden brown.

Let cool for a few minutes before serving. Enjoy!

Feeding my children six times a day is a decision rooted in my deep love and care for them. I know 6 meals/snacks a day can seem like a lot, but it’s essential to know that we don’t always eat six times a day. It’s on the menu, just in case.

Growing bodies require proper nutrition for optimal development, and I want to ensure that my children have the fuel they need to thrive. I feel blessed that I can do this!

We make 21 Meals and 21 Snacks weekly for 13 people, and the goal is to keep most of what we buy clean and healthy.
