Wrap with Omelette and Veggie Pastrami
A quick, tasty, and healthy meal – perfect for breakfast or dinner!

Ingredients:
• 1 flatbread (Lafa)
• 60g cherry tomatoes, halved
• 100g mushrooms, sliced
• 4 free-range eggs
• A handful of chopped parsley
• Salt, black pepper, and paprika – to taste
• 20g shredded yellow cheese
• Slices of plant-based pastrami
• Lettuce leaves

Instructions:
1. Sauté the mushrooms in a hot pan until they soften and brown slightly.
2. Add the cherry tomatoes and cook for another 2–3 minutes.
3. In a bowl, beat the eggs with salt, pepper, and paprika. Mix in the parsley.
4. Pour the egg mixture into the pan and cook as an omelette.
5. When the omelette is nearly done, sprinkle the cheese on top and let it melt.
6. Warm the flatbread slightly, then place the omelette in the center.
7. Add the veggie pastrami slices and fresh lettuce.
8. Roll up the flatbread like a wrap and serve warm.

Tip:
You can add a bit of your favorite sauce or hummus for extra flavor!
