Prepping ingredients for our favorite easy and delicious Masala Chicken—chopping onions, tomatoes, and getting everything ready.
But the real magic begins when the master chef (aka my toddler daughter) gets home from school! ????????❤️
With a little help from me, she cooks, we laugh, and we share dinner from the same bowl.
No screens, just real bonding time, lots of flavor, and moments we’ll always remember ????????????‍????



MASALA CHICKEN RECIPE (2 lbs)

???? Prep Time: 15 min
???? Cook Time: 40 min
???? Serves: 4–5

MARINATE:
• 2 lbs chicken
• 1 tsp salt
• 1 tsp turmeric
• Juice of 1 lemon
Marinate for 20 min

MASALA BASE:
• 3 tbsp ghee + 2 tbsp coconut oil
• 4 onions (chopped)
• 2 tbsp ginger garlic paste
• Salt to taste
• 2 tsp garam masala
• 2 tsp chicken curry masala
• ½ tsp turmeric
• 2 tsp coriander powder
• 5 tsp Kashmiri chili powder
• 6 tomatoes (chopped)

FINISH (optional):
• 2–4 tbsp chopped coriander
• 2 tsp ghee

METHOD:
1. Sauté onions + ginger garlic in ghee/oil until golden.
2. Add spices. Cook 2 min (splash water if needed).
3. Add tomatoes. Cook 4–5 min until soft & oily.
4. Add marinated chicken. Cook covered 20–30 min.
5. Uncover & reduce. Stir until masala thickens.
6. Finish with coriander & ghee.
