But the real magic begins when the master chef (aka my toddler daughter) gets home from school! ????????❤️
With a little help from me, she cooks, we laugh, and we share dinner from the same bowl.

MASALA CHICKEN RECIPE (2 lbs)
???? Prep Time: 15 min
???? Cook Time: 40 min
???? Serves: 4–5
MARINATE:
• 2 lbs chicken
• 1 tsp salt
• 1 tsp turmeric
• Juice of 1 lemon
Marinate for 20 min
MASALA BASE:
• 3 tbsp ghee + 2 tbsp coconut oil
• 4 onions (chopped)
• 2 tbsp ginger garlic paste
• Salt to taste
• 2 tsp garam masala
• 2 tsp chicken curry masala
• ½ tsp turmeric
• 2 tsp coriander powder
• 5 tsp Kashmiri chili powder
• 6 tomatoes (chopped)
FINISH (optional):
• 2–4 tbsp chopped coriander
• 2 tsp ghee
METHOD:
1. Sauté onions + ginger garlic in ghee/oil until golden.
2. Add spices. Cook 2 min (splash water if needed).
3. Add tomatoes. Cook 4–5 min until soft & oily.
4. Add marinated chicken. Cook covered 20–30 min.
5. Uncover & reduce. Stir until masala thickens.
6. Finish with coriander & ghee.
